I recently worked through getting LEGO NXT to work with OS X Lion to work.
With some investigation (many hours), I found that using LabVIEW in place of MINDSTORMS NXT-G (1) does not use Adobe Flash, (2) has a most recent NXT Firmware … ahead of LEGO’s release, and (3) has updated Mac OS X to NXT communications drivers.
Note: LabVIEW is the software technology licensed by LEGO for the MINDSTORMS bundle. LEGO software "works best" with an obsolete Adobe Flash version. LabVIEW does not require any Adobe Flash.
NXC and leJOS are other LEGO NXT programming languages.... just these are more for somewhat experienced C and Java programmers. LabVIEW can be set up for kids that are not ready for C or Java.
So, LabVIEW is really the foundation software one should consider in place of NXT-G on Mac OS X.
My LabVIEW with OS X Lion notes are here: http://18hats.net/m/wp/archives/55/LEGO-nxt-on-os-x-lion
I hope you find this information helpful.
I DO recommend LEGO NXT... however, on OS X you should be prepared to consider some other software options.
